Equivalents

Measuring equivalents and other aids to estimating quantities needed. These tend to come in handy when you have a recipe that requires something like 40 cups of flour and you don't know if you need a 5-pound or 10-pound bag. They're only estimates, remember to buy about 10% extra just in case.
All-purpose flour 1 pound 3 1/2 to 4 cups
Cornmeal 1 pound 3 cups
Brown sugar 1 pound 2 1/4 cups, packed
Confectioner's Sugar 1 pound about 3 3/4 cups
Granulated Sugar 1 pound 2 1/4 to 2 1/2 cups
Egg Whites 1 cup 8-10 whites
Egg Yolks 1 cup 12 to 14 yolks
Honey 16 ounces 1 1/3 cups
Graham Crackers 14 squares 1 cup crumbs
Saltine Crackers 28 crackers 1 cup crumbs
Vanilla Wafers 22 wafers 1 cup crumbs
